Zucchini & bacon slice

Makes 12 slices

1 block: divide into 12 serves

2 blocks: divide into 6 serves

3 blocks: divide into 4 serves

4 blocks: divide into 3 serves

Ingredients

  • 1 zucchini, grated

  • 1 cup carrot, grated

  • 5 cherry tomatoes, halved

  • 1 spring onion, chopped

  • 1 handful fresh basil, chopped

  • 4 slices shortcut bacon, fat removed, diced

  • 1/2 cup vegan mozzarella cheese

  • 1 tsp baking powder

  • 1 cup gluten free flour

  • 3 tsp olive oil

  • 5 eggs, lightly beaten

  • salt & pepper to taste

  • water to combine

Directions:

  • Pre-heat the oven to 180 degrees.

  • In a large bowl, combine zucchini, carrot, tomato, onion, basil, bacon, cheese, eggs and oil.

  • Lightly sift through the flour with salt & pepper to taste and stir.

  • Add a little bit of water if the mixture is too dry.

  • Pour into a baking dish lined with baking paper.

  • Bake for 30 - 40 minutes or until brown and cooked through.

  • Store in the fridge or freezer
