Makes 12 slices
1 block: divide into 12 serves
2 blocks: divide into 6 serves
3 blocks: divide into 4 serves
4 blocks: divide into 3 serves
Ingredients
1 zucchini, grated
1 cup carrot, grated
5 cherry tomatoes, halved
1 spring onion, chopped
1 handful fresh basil, chopped
4 slices shortcut bacon, fat removed, diced
1/2 cup vegan mozzarella cheese
1 tsp baking powder
1 cup gluten free flour
3 tsp olive oil
5 eggs, lightly beaten
salt & pepper to taste
water to combine
Directions:
Pre-heat the oven to 180 degrees.
In a large bowl, combine zucchini, carrot, tomato, onion, basil, bacon, cheese, eggs and oil.
Lightly sift through the flour with salt & pepper to taste and stir.
Add a little bit of water if the mixture is too dry.
Pour into a baking dish lined with baking paper.
Bake for 30 - 40 minutes or until brown and cooked through.
Store in the fridge or freezer
