Tuna and white bean salad

Total blocks:

4P, 4C, 4F

2 blocks: divide into 2 serves

4 blocks: eat the whole serve

Ingredients

  • 1/2 cup canned white beans

  • 380g tinned tuna in brine

  • 1 large red capsicum, chopped

  • 1 cup cucumber, chopped

  • 2 stalks of celery, chopped

  • 1/2 of an avocado, diced

  • 1 tsp olive oil

  • squeeze of lemon juice, salt & pepper to taste

Directions:

  • Drain and rinse the beans in cold water.

  • In a bowl, add all ingredients and gently mix with a spoon so as not to crush the beans.

  • Serve and enjoy.
