Ingredients
1/2 cup canned white beans
380g tinned tuna in brine
1 large red capsicum, chopped
1 cup cucumber, chopped
2 stalks of celery, chopped
1/2 of an avocado, diced
1 tsp olive oil
squeeze of lemon juice, salt & pepper to taste
Directions:
Drain and rinse the beans in cold water.
In a bowl, add all ingredients and gently mix with a spoon so as not to crush the beans.
Serve and enjoy.
