Lemon & berry soy yoghurt

Total blocks:

2P, 2C, 2F

1 block: divide into 2 serves

2 blocks: eat the whole serve

Ingredients

  • 120g silken tofu

  • 2 tbsp coconut yoghurt

  • 1 tbsp lemon juice & 1/2 tbsp grated lemon skin

  • 1/2 cup strawberries

  • 1/4 cup raspberries

  • 1/4 cup blueberries

Directions:

  • Blend all ingredients until smooth.


You may want to reserve some of the fruit out of the blender if you would like fruit as a topping.


Serve immediately or place in the freezer for a frozen yoghurt treat.


Storing in the fridge will cause the yoghurt to split, just give it a good stir.
