Coconut vanilla custard

Total blocks:

2P, 2C, 2F

1 block: divide into 2 serves

2 blocks: eat the entire serve

Ingredients

  • 1 tbsp coconut cream

  • 1 tsp vanilla extract

  • 1 cup lite soy milk (not bonsoy) or almond milk

  • 1 - 2 tsp monk fruit raw sugar

  • 1.5 tbsp vegan custard powder

  • 1 heaped scoop of protein powder of choice


Substitutes: use egg custard powder if not vegan.

Directions:

  • In a pan over low heat, combine coconut cream, vanilla and milk.

  • Gradually stir through the custard powder and keep stirring until it thickens.

  • Add the sugar & protein powder.

  • If it does thicken you can add a little cornflour or arrowroot powder (mixed with water) and stir until thick.

  • Serve warm or enjoy cold.

  • Use Well & Good Plant Based Vanilla Custard Powder (woolies/coles)
