Coconut energy balls

Total blocks:

1 ball = one block of P, C & F

1 block: eat one ball

2 blocks: eat two balls

Ingredients

  • 1/2 cup almond

  • 1.5 cups shredded coconut

  • 2 cups pitted dates

  • 1 tbsp cocao powder

  • 1/4 cup chocolate protein powder

  • 3 - 4 tbsp of water to combine

Directions:

  • In a high-speed blender or food processor, combine the almonds, one cup of coconut and dates. Pulse until combined, regularly scraping down the sides.

  • Add the cocoa powder and protein powder and continue blending until a thick dough remains.

  • If the dough is too crumbly, add some liquid (water), one tablespoon at a time, until the batter is thick and smooth.

  • Transfer your energy bites dough into a mixing bowl. On a large plate, add the remaining half cup of coconut. Using your hands, form 16 small balls of dough, rolling each one in the coconut until completely covered.

  • Place energy balls on a plate and refrigerate for at least an hour, or until firm.
