Side salad: divide into 2 for 2C, eat the whole serve for 4C.
Ingredients
2 packs Qetoe Noodles
160g chicken breast, sliced
2 cloves of garlic
1 tsp chilli flakes
1 tbsp gluten-free soy sauce
1 tsp rice vinegar
1 tsp sesame oil
1 tsp garlic-infused olive oil
chopped green onions to serve
Side Salad:
3 cups of raw veggies - mixed salad leaves, spinach and rocket
1/2 cup celery
1/4 cup capsicum, chopped
1/4 cup carrots, chopped
1/2 cup cucumber
1 - 2 tsp balsamic or apple cider vinegar
squeeze of lemon juice
Directions:
Prepare the noodles as per packet instructions.
In a pan with half of the oil, cook the chicken and set aside.
Add to the pan the garlic and saute until brown.
Add chilli flakes, soy sauce, rice vinegar, and the remaining oil. Stir for 30 seconds.
Toss in the noodles and chicken and stir to coat thoroughly in the chilli & garlic.
Serve warm with green onions and side salad.
