Cherry coconut tofu pudding

Total blocks:

4P, 4C, 4F

1 block: divide into 4 serves

2 blocks: divide into 2 serves

Ingredients

  • 2/4 cup frozen cherries

  • 1 cup soy milk (bonsoy is ok)

  • 300g silken tofu

  • 3 tbsp coconut cream

  • 1 tbsp cacao powder (optional)

  • 1/2 tsp monk fruit raw sugar


You may also want to use other fruits such as frozen strawberries, mixed berries or blueberries instead of cherries to add variety.


Directions:

  • Add all ingredients to a blender, and blend until smooth.

  • Divide into your preferred blocked serve and allow to set in the fridge overnight of for 4 hours.
