Apricot almond delight balls

Total blocks:

10P, 10C, 10F

1 ball = 1 block of P, C & F

1 block: eat one ball

2 blocks: eat two balls

Ingredients

  • 2/3 cup vanilla protein powder

  • 9 cashews

  • 1/2 cup dried apricots

  • 2 tbsp rice malt syrup

  • 1 tbsp melted coconut oil

  • 3 tsp desiccated coconut (to roll the balls in)


Directions:

  • In a bowl, melt the coconut oil and rice malt syrup in the microwave for 30 seconds until runny, add to a food processor or blender.

  • Add the rest of the ingredients to the food processor/ blender except the coconut and blend until well combined and sticky.

  • If the mixture is too dry, add 1 tsp of water at a time and blend until combined.

  • Roll into 10 balls or chop into squares then coat in the desiccated coconut.

  • Set and store in the fridge or freezer.
