1 ball = 1 block of P, C & F
1 block: eat one ball
2 blocks: eat two balls
Ingredients
2/3 cup vanilla protein powder
9 cashews
1/2 cup dried apricots
2 tbsp rice malt syrup
1 tbsp melted coconut oil
3 tsp desiccated coconut (to roll the balls in)
Directions:
In a bowl, melt the coconut oil and rice malt syrup in the microwave for 30 seconds until runny, add to a food processor or blender.
Add the rest of the ingredients to the food processor/ blender except the coconut and blend until well combined and sticky.
If the mixture is too dry, add 1 tsp of water at a time and blend until combined.
Roll into 10 balls or chop into squares then coat in the desiccated coconut.
Set and store in the fridge or freezer.
