1 block: have one ball
2 blocks: have two balls
Ingredients
1 + 1/3 cups pitted dates
1/4 cup unsalted almond butter
1 + 1/3 cup protein powder of choice
1/4 cup shredded coconut
1/4 cup cacao powder
1 tsp vanilla extract
pinch of salt
To roll the balls in:
1/4 cup shredded coconut
Variations: use other nut butter such as peanut butter, ABC butter or cashew butter.
Directions:
Add all ingredients (except the extra 1/4 cup of shredded coconut) to a food processor and blend until combined and sticky. Scrape down the edges as you do this.
Roll into 21 balls, then roll into the shredded coconut.
Storage:
Store in the fridge in an airtight container for up to 2 weeks or in the freezer for up to 3 months
